  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
Wet Ingredients
  • 1 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup almond milk
Fruits & Nuts
  • 1 cup mixed dried fruit (raisins, cranberries, apricots, chopped)
  • 1/2 cup chopped walnuts
  • 1 tbsp orange zest

Method
 

Prep
  1. Preheat oven to 350°F (175°C); grease and flour a 10-cup Bundt pan.
Mixing
  1. In a large bowl, whisk together whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In a separate bowl, combine applesauce, maple syrup, eggs, vanilla extract, and almond milk.
  3. Pour the wet ingredients into the dry ingredients, mixing until just combined. Gently fold in the mixed dried fruit, chopped walnuts, and orange zest.
Baking
  1. Transfer the batter evenly into the prepared Bundt pan and bake for 55-65 minutes, or until a wooden skewer inserted comes out clean.
Cooling
  1. Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

For extra flavor, soak dried fruit in orange juice or rum overnight. This cake tastes even better the next day.
