Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
Topping
  • 1/2 cup brown sugar, packed
  • 1/2 cup chopped nuts (optional) You can use walnuts or pecans.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the sour cream and vanilla.
  4. In another bowl, mix the flour, baking powder, baking soda, salt, and cinnamon. Gradually add this to the creamed mixture until just combined.
Baking
  1. Spread half of the batter in the prepared baking pan.
  2. In a small bowl, combine brown sugar, cinnamon, and nuts, if using. Sprinkle half of this mixture over the batter.
  3. Spoon the remaining batter on top and sprinkle the rest of the topping mixture over it.
  4. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow to cool slightly before serving.

Notes

Serve warm, cut into squares. Pair with coffee or tea, and consider dusting with powdered sugar. Store leftovers by covering tightly and refrigerating for up to a week.
