  • 30 pieces Ritz crackers About 1 box
  • 1 cup peanut butter Smooth or chunky based on preference
  • 1 cup chocolate chips Semi-sweet or milk chocolate
  • 0.5 cup sprinkles Any festive color
  • 1 cup white chocolate Optional, for drizzling or coating

Method
 

Preparation
  1. Lay out half of the Ritz crackers on a clean surface or baking sheet.
  2. Spoon about 1 tablespoon of peanut butter onto each cracker.
  3. Top each peanut butter-covered cracker with another Ritz cracker to make a sandwich.
  4. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring each time until smooth.
  5. Dip each cracker sandwich into the melted chocolate, covering it completely. Let the excess chocolate drip off.
  6. Place the chocolate-covered sandwiches on a cooling rack or parchment paper.
  7. While the chocolate is still wet, sprinkle festive sprinkles on top.
  8. If using white chocolate, melt it in a separate bowl and drizzle it over the cookies for an extra touch.
  9. Allow the cookies to cool until the chocolate hardens.

Notes

Store the cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them, but note that the chocolate may harden.
