Preparation
- Lay out half of the Ritz crackers on a clean surface or baking sheet.
- Spoon about 1 tablespoon of peanut butter onto each cracker.
- Top each peanut butter-covered cracker with another Ritz cracker to make a sandwich.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring each time until smooth.
- Dip each cracker sandwich into the melted chocolate, covering it completely. Let the excess chocolate drip off.
- Place the chocolate-covered sandwiches on a cooling rack or parchment paper.
- While the chocolate is still wet, sprinkle festive sprinkles on top.
- If using white chocolate, melt it in a separate bowl and drizzle it over the cookies for an extra touch.
- Allow the cookies to cool until the chocolate hardens.
Notes
Store the cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them, but note that the chocolate may harden.
