Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the chopped figs, sugar, and vegetable oil. Mix well.
- Beat in the eggs and vanilla extract until fully combined.
- In another bowl, mix the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the fig mixture, stirring until just combined.
- Fold in the nuts, if using.
- Pour the batter into a greased loaf pan.
Baking
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Serve fig bread warm or at room temperature, great with butter, tea, or coffee. Store any leftover bread in an airtight container for up to three days, or freeze for about three months.
