Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onions and carrots, and sauté until softened.
  3. Add the minced garlic and ground beef, cooking until the beef is browned.
  4. Stir in the chopped cabbage, diced tomatoes, and beef broth.
  5. Season with thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 30-40 minutes until the cabbage is tender.
  7. Serve hot.

Notes

For extra flavor, add a sprinkle of fresh herbs or grated cheese on top. This soup pairs well with crusty bread or crackers.
