  • 2 cups rhubarb, chopped Fresh rhubarb for the best flavor.
  • 4 pieces apples, peeled and chopped Use sweet apples.
  • 1 cup sugar Adjust to taste and based on the tartness of the rhubarb.
  • 1 tablespoon lemon juice Fresh lemon juice recommended.
  • 1 teaspoon cinnamon Optional, for added flavor.
  • 1 cup water Needed for cooking.

  1. In a medium saucepan, combine the chopped rhubarb, apples, sugar, lemon juice, and water.
  2. Bring to a boil over medium heat.
  3. Reduce heat and simmer for about 20-25 minutes, or until the rhubarb and apples are soft.
  4. Stir occasionally and mash gently with a fork for desired consistency.
  5. Add cinnamon if desired and mix well.
  6. Allow to cool before serving.

Notes

Serve warm or chilled. Great as a side dish or topping for breakfast items like pancakes, oatmeal, or yogurt. Store in an airtight container in the refrigerator for up to one week. Freeze for longer storage, leaving some space at the top of the container.
