Ingredients
  

Cake
  • 2 medium Oranges
  • 200 g Pistachios shelled, unsalted
  • 200 g Granulated sugar
  • 6 large Eggs
  • 1 tsp Baking powder
Glaze (Optional)
  • 100 g Powdered sugar
  • 2 tbsp Orange juice

Method
 

Preparation
  1. Boil whole oranges in a saucepan for 1-2 hours until very soft, then cool, halve, remove seeds, and purée in a food processor.
  2. Preheat oven to 170°C (340°F) and grease an 8-inch springform pan.
Cake Assembly
  1. In a large mixing bowl, combine the orange purée, ground pistachios, granulated sugar, eggs, and baking powder. Mix until well combined.
  2. Pour the batter into the prepared springform pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
  3. Let the cake cool completely in the pan on a wire rack before unmolding.
Glaze (Optional)
  1. Whisk together powdered sugar and orange juice to create a smooth glaze. Drizzle over the cooled cake before serving.

Notes

For best results, ensure the oranges are very well puréed to avoid any bitterness. The cake is delicious served with a dollop of Greek yogurt or crème fraîche.
