Preparation
- Boil whole oranges in a saucepan for 1-2 hours until very soft, then cool, halve, remove seeds, and purée in a food processor.
- Preheat oven to 170°C (340°F) and grease an 8-inch springform pan.
Cake Assembly
- In a large mixing bowl, combine the orange purée, ground pistachios, granulated sugar, eggs, and baking powder. Mix until well combined.
- Pour the batter into the prepared springform pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool completely in the pan on a wire rack before unmolding.
Glaze (Optional)
- Whisk together powdered sugar and orange juice to create a smooth glaze. Drizzle over the cooled cake before serving.
Notes
For best results, ensure the oranges are very well puréed to avoid any bitterness. The cake is delicious served with a dollop of Greek yogurt or crème fraîche.
