Preparation
- In a medium bowl, combine the eggs, milk, melted butter, and vanilla extract. Whisk until smooth and creamy.
- In a large bowl, stir together the flour, brown sugar, baking powder, ground cinnamon, and salt.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
- Gently fold in the chopped bananas, making sure they are evenly spread throughout the batter.
Cooking
- In a large pot, fill it with vegetable oil about 2 inches deep and heat it to 350°F (175°C).
- Using a cookie scoop, carefully drop 3-4 scoops of batter into the hot oil. Fry for 4-5 minutes, flipping them occasionally, until they are golden brown.
- Once done, use a slotted spoon to remove the fritters and let them drain on a paper towel-lined tray.
Glaze
- In a separate bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of cinnamon until smooth.
- Once the fritters have cooled a bit, dip each one into the glaze, ensuring they are generously coated.
