Ingredients
  

For the fritters
  • 2 large eggs (room temperature)
  • 2/3 cup milk (room temperature)
  • 1 tablespoon unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 medium ripe bananas (chopped) Make sure bananas are very ripe for best sweetness and flavor.
  • vegetable oil (for frying) Enough to reach 2 inches depth.
For the glaze
  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Method
 

Preparation
  1. In a medium bowl, combine the eggs, milk, melted butter, and vanilla extract. Whisk until smooth and creamy.
  2. In a large bowl, stir together the flour, brown sugar, baking powder, ground cinnamon, and salt.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined.
  4. Gently fold in the chopped bananas, making sure they are evenly spread throughout the batter.
Cooking
  1. In a large pot, fill it with vegetable oil about 2 inches deep and heat it to 350°F (175°C).
  2. Using a cookie scoop, carefully drop 3-4 scoops of batter into the hot oil. Fry for 4-5 minutes, flipping them occasionally, until they are golden brown.
  3. Once done, use a slotted spoon to remove the fritters and let them drain on a paper towel-lined tray.
Glaze
  1. In a separate bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of cinnamon until smooth.
  2. Once the fritters have cooled a bit, dip each one into the glaze, ensuring they are generously coated.

Notes

These banana fritters are best served warm. They can be enjoyed as breakfast, a snack, or dessert. Serve with fresh fruit or whipped cream for extra delight. Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to a week.
