Ingredients
  

For the casserole
  • 1 pound ground beef
  • 1 cup rice White or brown rice can be used.
  • 1 can French onion soup
  • 1 cup shredded cheese (cheddar or Swiss) You can also use mozzarella.
  • 1 cup beef broth Can be substituted with vegetable broth for a vegetarian version.
  • 1 onion, chopped
  • 1 clove garlic, minced
  • to taste Salt and pepper
  • 1 tablespoon olive oil For sautéing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté onions until translucent. Add garlic and cook for another minute.
  3. Add ground beef to the skillet, cooking until browned. Drain excess fat.
Mixing
  1. In a large mixing bowl, combine the beef mixture, rice, French onion soup, beef broth, salt, and pepper.
Baking
  1. Pour the mixture into a greased casserole dish, cover with foil, and bake for 30 minutes.
  2. Remove foil, sprinkle cheese on top, and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  3. Let it cool for a few minutes before serving.

Notes

Serve warm with a simple green salad or steamed vegetables. For added flavor, try adding fresh herbs like thyme or parsley. You can top the casserole with crushed fried onions for some crunch.
