  • 4 medium Fresh tomatoes Use ripe, high-quality tomatoes for the best flavor.
  • ¼ cup Olive oil
  • 2 tablespoons Balsamic vinegar Increase for more tang if desired.
  • ¼ cup Fresh basil, chopped
  • ¼ cup Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • ½ teaspoon Salt
  • ½ teaspoon Pepper

Method
 

Preparation
  1. Wash and slice the fresh tomatoes.
  2. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, chopped basil, chopped parsley, salt, and pepper.
  3. Add the sliced tomatoes to the marinade and gently toss to coat.
  4. Let the tomatoes marinate for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator and consume within 2 days for the freshest taste. The flavors will meld, but the tomatoes may lose their firm texture over time.
