Ingredients
  

Cookie Base
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 cup sprinkles Feel free to use different colored sprinkles.
Frosting and Toppings
  • 1 cup vanilla buttercream frosting Other flavors can be used as well.
  • Extra sprinkles for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add the egg and vanilla to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the sprinkles.
  6. Spread the dough evenly in the prepared baking pan.
Baking
  1. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  2. Allow to cool completely in the pan on a wire rack.
Frosting and Serving
  1. Once cooled, spread the vanilla buttercream frosting over the top and sprinkle with extra sprinkles.
  2. Cut into bars and serve!

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week; let them come to room temperature before serving.
