Ingredients
  

Taco Shells
  • 12 small flour tortillas
  • 2 tbsp unsalted butter melted
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream
Coating
  • 2 cups Fruity Pebbles cereal crushed slightly

Method
 

Prepare Taco Shells
  1. Cut tortillas into taco shapes, brush with melted butter, and sprinkle with cinnamon sugar. Bake or air fry until crispy, then immediately shape into taco shells and let cool.
Make Cheesecake Filling
  1. In a bowl, beat softened cream cheese until smooth, then mix in powdered sugar and vanilla extract. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
Assemble Tacos
  1. Fill each cooled tortilla shell with the cheesecake mixture. Gently press the open edges of the filled tacos into the crushed Fruity Pebbles cereal to coat, then serve immediately or chill for later.

Notes

For best results, chill the filled tacos for at least 30 minutes before serving to allow the cheesecake filling to set.
