- Prepare the Vanilla Buttercream: In a mixing bowl, beat the softened butter until smooth. Gradually add powdered sugar while mixing on low speed.

- In another bowl, cream the softened butter and sugar until light and fluffy.

- Gradually add dry ingredients to the wet mixture, mixing until just combined. Gently fold in the Funfetti sprinkles.
- Roll the dough into small balls, place on the baking sheet, and flatten slightly.
- Bake for 10–12 minutes, or until edges are lightly golden. Cool completely on a wire rack.
- Assemble the Sandwich Cookies: Once cooled, spread a layer of vanilla buttercream on one cookie and top with another to create a sandwich.
