Ingredients
  

For the Marinade
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar Can substitute with white wine vinegar or apple cider vinegar.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil Fresh herbs can be used as an alternative.
  • Salt and pepper to taste

  • 1 pound chicken (breasts or thighs)

Method
 

Preparation
  1. In a bowl, combine minced garlic, olive oil, red wine vinegar, oregano, basil, salt, and pepper.
  2. Whisk until well combined.
  3. Place chicken in a resealable bag or shallow dish and pour marinade over it.
  4. Seal or cover and refrigerate for at least 1 hour, or preferably overnight.
Cooking
  1. Grill or bake chicken as desired.
  2. Reserve any leftover marinade for salad dressing.

Notes

For best results, marinate the chicken overnight to allow flavors to seep in. Adjust the herbs according to taste.
