  • 4 large boneless, skinless chicken breasts cut into 1-inch pieces
  • 1.5 lbs small red potatoes quartered
Sauce & Seasoning
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp dried Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
For Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Cut the chicken breasts into 1-inch pieces and quarter the small red potatoes.
Combine & Season
  1. In a large mixing bowl, combine the cut chicken and potatoes with olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper. Toss well to ensure everything is evenly coated.
Roast
  1. Spread the seasoned chicken and potatoes in a single layer on a large baking sheet. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender and lightly browned.
Serve
  1. Remove from oven, garnish with fresh chopped parsley, and serve hot.

Notes

For extra crispiness, broil for the last 2-3 minutes. You can also add other vegetables like broccoli or bell peppers during the last 15 minutes of roasting.
