Ingredients
  

For the Crust
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Halibut
  • 4 pieces halibut fillets (about 6 ounces each)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 serving Lemon wedges (for serving)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the Parmesan cheese, panko breadcrumbs, parsley, minced garlic, lemon zest, salt, and pepper.
  3. Drizzle the melted butter, olive oil, and lemon juice over the halibut fillets.
  4. Spread the breadcrumb mixture evenly on top of each fillet.
  5. Place the fillets on a greased baking sheet.
Cooking
  1. Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and the topping is golden brown.
  2. Remove from the oven and let it cool slightly before serving.

Notes

For a bit of spice, add a pinch of red pepper flakes to the breadcrumb mixture. Ensure not to overcook the halibut; it should be flaky and tender. If you’re short on time, you can use pre-minced garlic instead of fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispy texture.
