Dough Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 package (2 1/4 tsp) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk, warmed Make sure the milk is warm but not hot.
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Mix-ins
  • 1 cup mixed dried fruits (such as raisins, currants, and chopped citrus peel)
  • 1/2 cup chopped nuts (such as almonds and walnuts)
  • Powdered sugar for dusting Do not skip; it adds a lovely touch.

Method
 

Preparation
  1. In a large bowl, combine flour, sugar, yeast, and salt.
  2. In another bowl, mix the warmed milk, melted butter, egg, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Knead the dough for about 5-7 minutes until smooth.
  5. Add in the dried fruits, nuts, cinnamon, and nutmeg, and knead until evenly distributed.
  6. Let the dough rise in a warm place for about 1 hour, or until doubled in size.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Divide the dough into small bite-sized pieces and shape them as desired.
  3. Place them on a baking sheet lined with parchment paper.
  4. Bake for about 15-20 minutes or until golden brown.
  5. Allow cooling, then dust with powdered sugar before serving or packaging as gifts.

Notes

Store the stollen bites in an airtight container at room temperature for up to a week. If you want to keep them longer, you can freeze them for up to three months. Just thaw them at room temperature before serving. Experiment with different dried fruits and nuts to find your favorite combination.
