Preparation
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set this mixture aside.
- In a large bowl, cream the softened butter and brown sugar together until the mixture is light and fluffy. Beat in the egg and molasses until combined.
- Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to over-mix.
- In another bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth to create the filling.
Assembly and Baking
- Scoop a small amount of dough, flatten it, add a spoonful of the cream cheese filling, and then wrap the dough around the filling, rolling it into a ball.
- Roll each ball in the sugar mixed with cinnamon.
- Place the balls on the prepared baking sheet and bake for about 10-12 minutes, or until the cookies are set.
- Let them cool before serving.
Notes
Store in an airtight container at room temperature for about a week. Freeze for longer storage with parchment paper between layers. Allow to thaw at room temperature before eating.
