Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting Use generously for a snowy effect.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the molasses, egg, and vanilla until well combined.
  5. Gradually blend in the dry ingredients until a dough forms.
  6. Chill the dough for at least 30 minutes.
Baking
  1. Roll tablespoons of dough into balls and roll them in powdered sugar.
  2. Place the cookies on a baking sheet lined with parchment paper.
  3. Bake for 8-10 minutes until the edges are set but the centers are soft.
  4. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for about a week, or freeze for up to three months. Double the spices for a stronger flavor.
