Preparation
- Preheat your oven to 400°F (200°C). Slice the sweet potatoes into 1/4-inch thick rounds, then toss them with olive oil, salt, and black pepper.
- Arrange the sweet potato rounds in a single layer on a baking sheet and bake for 15-20 minutes, or until tender.
- Remove the sweet potatoes from the oven, top each round with crumbled feta cheese, and drizzle with honey. Return to the oven for an additional 5 minutes, until the feta is warm and slightly softened.
- Garnish with fresh chopped rosemary before serving.
Notes
For an extra kick, sprinkle with a pinch of red pepper flakes before baking.
