Ingredients

For the marinade
  • 3 tbsp olive oil Extra virgin recommended for better flavor.
  • 4 cloves fresh garlic, minced Use fresh garlic for the best flavor.
  • 2 tbsp freshly squeezed lemon juice Freshly squeezed is preferred.
  • 2 tsp dried oregano Replace with fresh oregano if available.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
For the chicken
  • 4 pieces boneless, skinless chicken breasts Approximately 1.5 lbs total.

Method

Marinate the Chicken
  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (up to 4 hours).
Cooking the Chicken
  1. Preheat your grill to medium-high or your oven to 400°F (200°C).
  2. Grill or bake the chicken tenders for 6-7 minutes per side until they reach an internal temperature of 165°F (75°C) and are golden brown.
Final Steps
  1. Allow the chicken to rest for 5 minutes before slicing.
  2. Serve with your favorite dipping sauces or fresh veggies.

Notes

For even more flavor, marinate the chicken overnight. If grilling, ensure your grill is preheated to avoid sticking. Use a meat thermometer to check that the chicken is cooked through. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
