Preparation
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, chopped dill, oregano, salt, and pepper to create the marinade.
- Place salmon fillets in the prepared baking dish. Pour the marinade evenly over the salmon, ensuring each piece is coated.
- Arrange cherry tomatoes and Kalamata olives around the salmon in the baking dish.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately with your favorite side dishes.
Notes
For best results, use fresh salmon fillets. Adjust the amount of lemon and herbs to your personal preference. Serve with a side of quinoa or a fresh Greek salad.
