  • 1 cup fresh pineapple, cubed Feel free to swap for other fruits like peaches.
  • 1/2 cup BBQ sauce Try different flavors like honey BBQ or spicy chipotle.
  • 1 tablespoon olive oil

  • Skewers (wooden or metal) Soak wooden skewers in water for at least 30 minutes before grilling.

Preparation
  1. In a bowl, combine the cubed chicken, BBQ sauce, olive oil, salt, and pepper. Mix well to coat the chicken evenly. Marinate for at least 30 minutes.
  2. Preheat the grill to medium heat.
  3. Thread the marinated chicken and pineapple pieces onto the skewers, alternating between chicken and pineapple.
Grilling
  1. Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  1. Serve warm and enjoy! These kabobs are best served right off the grill, garnished with fresh herbs and paired with a side salad or rice.

Notes

If you have leftovers, let the kabobs cool completely. Store them in an airtight container in the refrigerator for about 3-4 days. To reheat, place them on a grill or in the oven.
