  • 1 lb Shrimp large, peeled and deveined, tails on or off
  • 1/4 cup Olive oil
  • 4 cloves Garlic minced
  • 2 tbsp Fresh parsley chopped
  • 1 tbsp Fresh thyme chopped
  • 1 tbsp Lemon juice freshly squeezed
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Combine shrimp with olive oil, minced garlic, chopped parsley, thyme, lemon juice, salt, and pepper in a bowl.
  2. Toss to coat the shrimp evenly, then let marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
  3. Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  4. Thread the marinated shrimp onto skewers if desired, or place them directly onto the hot grill.
  5. Grill for 2-3 minutes per side, or until the shrimp turn pink and opaque, being careful not to overcook.
  6. Remove from the grill and serve immediately, optionally garnished with extra fresh herbs or lemon wedges.

Notes

For best results, do not overcook the shrimp; they cook very quickly. Serve immediately with lemon wedges.
