Preparation
- Combine shrimp with olive oil, minced garlic, chopped parsley, thyme, lemon juice, salt, and pepper in a bowl.
- Toss to coat the shrimp evenly, then let marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
- Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
- Thread the marinated shrimp onto skewers if desired, or place them directly onto the hot grill.
- Grill for 2-3 minutes per side, or until the shrimp turn pink and opaque, being careful not to overcook.
- Remove from the grill and serve immediately, optionally garnished with extra fresh herbs or lemon wedges.
