Grilled Salmon with Avocado Salsa

Ingredients
  

For the Salmon
  • 4 each Salmon fillets about 6 oz each, skin on or off
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Avocado Salsa
  • 2 large Avocados diced
  • 1 cup Cherry tomatoes halved or quartered
  • 1/4 cup Red onion finely diced
  • 1/4 cup Fresh cilantro chopped
  • 2 tbsp Lime juice
  • 1/2 each Jalapeño seeded and minced, optional

Method
 

Preparing the Salmon
  1. Pat salmon fillets dry, then brush with olive oil and season generously with salt and pepper on both sides.
  2. Preheat your grill to medium-high heat (about 400-450°F or 200-230°C) and lightly oil the grates to prevent sticking.
Making the Avocado Salsa
  1. In a medium bowl, combine the diced avocados, halved cherry tomatoes, finely diced red onion, chopped cilantro, and minced jalapeño (if using).
  2. Pour the fresh lime juice over the salsa ingredients and gently toss everything together until well combined.
Grilling and Serving
  1. Place the seasoned salmon fillets, skin-side down (if applicable), on the preheated grill and cook for 4-6 minutes per side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
  2. Carefully remove the grilled salmon from the grill and let it rest for a couple of minutes before serving immediately with generous dollops of the fresh avocado salsa.

Notes

For extra flavor, marinate the salmon in a little olive oil, lemon juice, salt, and pepper for at least 30 minutes before grilling.
