Preparing the Salmon
- Pat salmon fillets dry, then brush with olive oil and season generously with salt and pepper on both sides.
- Preheat your grill to medium-high heat (about 400-450°F or 200-230°C) and lightly oil the grates to prevent sticking.
Making the Avocado Salsa
- In a medium bowl, combine the diced avocados, halved cherry tomatoes, finely diced red onion, chopped cilantro, and minced jalapeño (if using).
- Pour the fresh lime juice over the salsa ingredients and gently toss everything together until well combined.
Grilling and Serving
- Place the seasoned salmon fillets, skin-side down (if applicable), on the preheated grill and cook for 4-6 minutes per side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
- Carefully remove the grilled salmon from the grill and let it rest for a couple of minutes before serving immediately with generous dollops of the fresh avocado salsa.
Notes
For extra flavor, marinate the salmon in a little olive oil, lemon juice, salt, and pepper for at least 30 minutes before grilling.
