Marinade Preparation
- In a large bowl, mix honey, lime juice, chili powder, minced garlic, olive oil, and salt to make the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
Grilling
- Preheat your grill to medium-high heat.
- Take the chicken out of the marinade, allowing excess marinade to drip off.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (74°C).
- Once cooked, let the chicken rest for a few minutes before serving. Sprinkle with chopped cilantro if desired.
Notes
Serve with rice, grilled vegetables, or salad. Great for tacos or wraps. Drizzle extra honey-lime sauce for added flavor. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. For more heat, add extra chili powder or chopped jalapeños to the marinade.
