Ingredients
  

For the Marinade
  • 1/3 cup honey (preferably local)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tbsp chili powder (adjust to spice preference)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil (for marinade)
  • 1 tsp salt (use kosher if possible)
Main Ingredients
  • 2 lb chicken thighs (boneless and skinless)
  • 1/4 cup cilantro (chopped, optional) For garnish

Method
 

Marinade Preparation
  1. In a large bowl, mix honey, lime juice, chili powder, minced garlic, olive oil, and salt to make the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Take the chicken out of the marinade, allowing excess marinade to drip off.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (74°C).
  4. Once cooked, let the chicken rest for a few minutes before serving. Sprinkle with chopped cilantro if desired.

Notes

Serve with rice, grilled vegetables, or salad. Great for tacos or wraps. Drizzle extra honey-lime sauce for added flavor. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. For more heat, add extra chili powder or chopped jalapeños to the marinade.
