  • 1 cup fresh corn kernels Can substitute with thawed frozen corn.
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
Dressing
  • 2 tablespoons olive oil Additional for marinating if desired.
  • Salt and pepper to taste
Garnish
  • Fresh herbs (e.g., basil or parsley) for garnish

Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. In a bowl, toss the zucchini slices with olive oil, salt, and pepper.
Grilling
  1. Grill the zucchini for 3-4 minutes on each side until tender and grill marks appear.
  2. In a large bowl, combine the grilled zucchini, fresh corn, and diced peppers.
Serving
  1. Toss everything together and garnish with fresh herbs.
  2. Serve warm or at room temperature.

Notes
