  • 1 lb ground beef
  • 1 small head cabbage, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced tomatoes canned or fresh
  • 2 carrots, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until soft.
  3. Add the ground beef and cook until browned.
  4. Stir in the diced tomatoes, beef broth, carrots, chopped cabbage, and thyme.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and let simmer for about 30 minutes.
  7. Serve hot and enjoy!

Notes

Serve with fresh parsley on top for garnish. It's great with crusty bread or crackers on the side. Allow leftovers to cool completely, then store in an airtight container in the refrigerator for 3-4 days or freeze for longer storage.
