  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons Olive oil For sautéing.

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until fragrant.
  3. Add ground turkey and cook until browned.
  4. Stir in black beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. Serve warm with optional toppings.

Notes

This soup can be made ahead of time for better flavor. Store leftovers in the refrigerator for up to 3-4 days, or freeze in portion-sized containers for up to 3 months. You can substitute ground turkey with ground beef or chicken and use vegetable broth for a vegetarian option.
