- In a large skillet, heat sesame oil over medium heat.
- Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add the ground turkey, breaking it apart, and cook until browned.
- Stir in mixed vegetables and cook for an additional 3-4 minutes.
- Add cooked rice and soy sauce, stirring to combine. Cook until heated through, about 2-3 minutes.
- Season with salt, pepper, and top with chopped green onions.
- Serve hot, garnished with Sriracha if desired.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stove. Great for meal prep. Adjust soy sauce and Sriracha to suit your taste.
