- In a large pot, heat olive oil over medium heat.
- Add the onion, carrot, and celery. Sauté until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add the ground turkey, breaking it apart with a spoon, and cook until browned.
- Stir in the white beans, kale, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes until kale is tender.
- Adjust seasoning as needed and serve warm.
Notes
This soup can be served alone or with a side of crusty bread. Top with grated parmesan cheese for extra flavor. Great for meal prep.
