  • 1 lb ground turkey
  • 1 can white beans, drained and rinsed
  • 4 cups kale, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • for cooking Olive oil

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrot, and celery. Sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add the ground turkey, breaking it apart with a spoon, and cook until browned.
  5. Stir in the white beans, kale, broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until kale is tender.
  7. Adjust seasoning as needed and serve warm.

Notes

This soup can be served alone or with a side of crusty bread. Top with grated parmesan cheese for extra flavor. Great for meal prep.
