Method
 

Making the Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the peanut butter, maple syrup, egg, and vanilla extract until smooth.
  3. Add the baking soda, salt, and oat flour to the wet ingredients, mixing until just combined; fold in chocolate chips if using.
  4. Scoop tablespoon-sized portions of dough and roll them into balls, then place them on the prepared baking sheet.
  5. Gently flatten each cookie ball with a fork in a crisscross pattern.
  6. Bake for 9-12 minutes, or until the edges are lightly golden; let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, ensure your peanut butter is natural and unsweetened. These cookies are delicious slightly warm or cooled. Store in an airtight container at room temperature.
