Making the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the peanut butter, maple syrup, egg, and vanilla extract until smooth.
- Add the baking soda, salt, and oat flour to the wet ingredients, mixing until just combined; fold in chocolate chips if using.
- Scoop tablespoon-sized portions of dough and roll them into balls, then place them on the prepared baking sheet.
- Gently flatten each cookie ball with a fork in a crisscross pattern.
- Bake for 9-12 minutes, or until the edges are lightly golden; let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, ensure your peanut butter is natural and unsweetened. These cookies are delicious slightly warm or cooled. Store in an airtight container at room temperature.
