Preparation
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the whole wheat flour, baking powder, salt, cinnamon, and coconut sugar.
- In another bowl, mix the applesauce, almond milk, melted coconut oil, and vanilla extract until well combined.
- Slowly add the wet ingredients to the dry ingredients and stir until a dough forms.
- Shape the dough into small bite-sized pieces and place them on the prepared baking sheet.
Baking
- Bake for 15-20 minutes until golden brown.
- While still warm, toss the churro bites in cinnamon sugar.
Notes
Serve warm. Pairs well with fruit or yogurt. Sprinkle extra cinnamon sugar on top for added sweetness. Store leftovers in an airtight container at room temperature for up to two days or in the fridge for up to a week.
