Wet Ingredients
  • 1/2 cup unsweetened applesauce Acts as a natural sweetener and moisture source.
  • 1/4 cup coconut oil, melted Adds richness and moisture.
  • 1/4 cup honey or maple syrup Natural sweetener; use maple syrup for vegan option.
  • 1 tsp vanilla extract Adds flavor.
Optional Add-Ins
  • to taste dark chocolate chips or nuts Customize with your favorite mix-ins.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, combine the applesauce, melted coconut oil, honey (or maple syrup), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined. If using, fold in dark chocolate chips or nuts.
Baking
  1. Scoop tablespoons of the dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
Cooling
  1. Allow to cool before enjoying your guilt-free cookies.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage. Room temperature ingredients are recommended for better mixing.
