- In a large bowl, whisk together the almond milk, honey or maple syrup, lime juice, lime zest, vanilla extract, and salt until well combined.
- Stir in the chia seeds and shredded coconut.
- Allow the mixture to sit for about 10 minutes, then stir again to prevent clumping.
- Pour the mixture into a lined baking dish and spread it evenly.
- Cover and refrigerate for at least 4 hours or until set.
- Once set, cut into bars and serve chilled.
Notes
These bars are best served chilled. Serve plain or top with extra shredded coconut or fresh fruit. Store in an airtight container in the refrigerator for about a week, or freeze with parchment paper to prevent sticking.
