Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, dried fruits, nuts, seeds, honey or maple syrup, nut butter, vanilla extract, and salt until well combined.
- Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
Baking
- Bake for 10-12 minutes or until golden brown.
- Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
These cookies are tasty on their own, but can be served with milk, yogurt, or fruit for a balanced snack. Store in an airtight container for a few days, or freeze for longer storage. Mix and match nuts, seeds, and dried fruits to suit your taste.
