  • 1 cup oats Use quick oats for best results
  • 1/2 cup mixed dried fruits (e.g., raisins, cranberries)
  • 1/2 cup assorted nuts (e.g., almonds, walnuts, cashews)
  • 1/2 cup seeds (e.g., sunflower seeds, chia seeds, pumpkin seeds)
  • 1/4 cup honey or maple syrup for sweetness
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, dried fruits, nuts, seeds, honey or maple syrup, nut butter, vanilla extract, and salt until well combined.
  3. Scoop tablespoon-sized amounts of the mixture onto the prepared baking sheet, flattening them slightly.
Baking
  1. Bake for 10-12 minutes or until golden brown.
  2. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

These cookies are tasty on their own, but can be served with milk, yogurt, or fruit for a balanced snack. Store in an airtight container for a few days, or freeze for longer storage. Mix and match nuts, seeds, and dried fruits to suit your taste.
