Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the peanut butter, maple syrup, and egg, mixing until thoroughly combined.
- Add the oat flour, baking soda, and salt to the wet ingredients, mixing gently until just incorporated without overmixing.
- Drop spoonfuls of the dough onto the prepared baking sheet, then use a fork to flatten each cookie slightly and create a crisscross pattern.
- Bake for 10-12 minutes, or until the edges of the cookies appear lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.
Notes
For an extra crunch, you can add a handful of chopped peanuts to the dough.
