Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the peanut butter, maple syrup, and egg, mixing until thoroughly combined.
  3. Add the oat flour, baking soda, and salt to the wet ingredients, mixing gently until just incorporated without overmixing.
  4. Drop spoonfuls of the dough onto the prepared baking sheet, then use a fork to flatten each cookie slightly and create a crisscross pattern.
  5. Bake for 10-12 minutes, or until the edges of the cookies appear lightly golden.
  6. Allow the cookies to cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.

Notes

For an extra crunch, you can add a handful of chopped peanuts to the dough.
