Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the peanut butter, maple syrup, egg, vanilla extract, baking soda, and salt until smooth and well combined.
  3. Roll the dough into 1-inch balls and place them two inches apart on the prepared baking sheet.
  4. Flatten each cookie with a fork in a crisscross pattern.
  5. Bake for 9-11 minutes, or until the edges are lightly golden.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a slightly crispier cookie, bake for an additional 1-2 minutes. Ensure to cool completely on a wire rack to allow them to set properly.
