Preparation
- In a medium bowl, whisk together the whole wheat pastry flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and sweetener until light and fluffy using an electric mixer. Beat in the egg, vanilla extract, and almond milk until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined to form a soft dough.
- Flatten the dough into a disc, wrap it in plastic, and chill in the refrigerator for at least 30 minutes, or until firm enough to roll.
- On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes.
Baking
- Place the cut cookies on baking sheets lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure your butter and eggs are at room temperature before mixing. This helps create a smooth, well-combined dough.
