  • 1 tsp Vanilla extract
  • 1.5 cups Mashed ripe bananas about 3-4 large
  • 0.5 cup Buttermilk
  • 1 cup Chopped walnuts
Cream Cheese Frosting
  • 16 oz Cream cheese softened
  • 0.5 cup Unsalted butter softened
  • 4 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1-2 tbsp Milk if needed

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Whisk together flour, baking soda, salt, and cinnamon in a medium bowl; set aside.
  3. In a large bowl, combine sugar and oil, then beat in eggs and vanilla until well blended.
  4. Mix in mashed bananas and buttermilk into the wet ingredients.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined, then fold in walnuts.
  6. Divide batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
Cream Cheese Frosting
  1. For the frosting, beat softened cream cheese and butter until smooth.
  2. Gradually add powdered sugar and vanilla extract, beating until light and fluffy. Add milk if necessary for desired consistency.
Assembly
