Roasted Carrots
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper on a baking sheet, then spread in a single layer.
- Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
Candied Pecans
- While carrots roast, melt maple syrup in a small skillet over medium heat. Add pecans and stir constantly for 3-5 minutes until coated and toasted.
- Remove from heat and spread pecans on a piece of parchment paper to cool and crisp.
Assemble and Serve
- Transfer roasted carrots to a serving dish. Sprinkle with candied pecans, crumbled goat cheese, and fresh thyme, if using.
- Serve warm as a delicious side dish.
Notes
For extra flavor, a drizzle of balsamic glaze can be added before serving.
