  • 2 lbs Carrots peeled and cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Pecans chopped
  • 2 tbsp Maple syrup
  • 4 oz Goat cheese crumbled
  • 1 tbsp Fresh thyme chopped (optional)

Method
 

Roasted Carrots
  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper on a baking sheet, then spread in a single layer.
  2. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
Candied Pecans
  1. While carrots roast, melt maple syrup in a small skillet over medium heat. Add pecans and stir constantly for 3-5 minutes until coated and toasted.
  2. Remove from heat and spread pecans on a piece of parchment paper to cool and crisp.
Assemble and Serve
  1. Transfer roasted carrots to a serving dish. Sprinkle with candied pecans, crumbled goat cheese, and fresh thyme, if using.
  2. Serve warm as a delicious side dish.

Notes

For extra flavor, a drizzle of balsamic glaze can be added before serving.
