  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups pureed fresh strawberries
  • 0.5 cups milk
  • 0.5 cups sliced fresh strawberries for decoration
Frosting Ingredients
  • 2 cups powdered sugar
  • 0.5 cups unsalted butter, softened for frosting
  • 1 teaspoon vanilla extract for frosting
  • 0.25 cups pureed fresh strawberries for frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. Add the butter and mix until crumbly.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and strawberry puree.
  5. Gradually add the milk until the batter is smooth.
Baking
  1. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Frosting
  1. Beat the butter until creamy, then gradually add the powdered sugar, vanilla extract, and strawberry puree until smooth.
  2. Once the cake has cooled, frost the cake and decorate with sliced fresh strawberries.

Notes

Serve at room temperature. Add whipped cream or vanilla ice cream for an extra treat. Store in an airtight container at room temperature for up to 2 days, in the fridge for up to a week, or freeze for up to 3 months.
