  • 1 lb fresh or frozen strawberries
  • 1/2 cup water
  • 4 tablespoons unflavored gelatin
  • 1 tablespoon lemon juice
  • 2-4 tablespoons sweetener (e.g., honey or maple syrup) optional

  • Silicone molds or 8x8-inch baking dish

Method
 

Preparation
  1. Combine strawberries, water, and lemon juice in a blender and process until a smooth purée forms.
  2. Strain the strawberry mixture through a fine-mesh sieve into a medium saucepan to remove any seeds.
  3. Sprinkle the gelatin evenly over the strained strawberry purée in the saucepan and let it bloom for about 5 minutes.
  4. Heat the mixture over medium-low heat, stirring continuously until the gelatin is completely dissolved; do not allow it to boil. Stir in the optional sweetener to taste.
  5. Carefully pour the warm mixture into silicone molds or a lightly greased 8x8-inch baking dish.
  6. Refrigerate for a minimum of 2 hours, or until the fruit snacks are fully set.
  7. Once set, remove the fruit snacks from the molds or cut them into desired shapes if using a baking dish.

Notes

For a firmer snack, add an extra teaspoon of gelatin. These fruit snacks can be stored in an airtight container in the refrigerator for up to a week.
