Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the sweet potatoes into bite-sized cubes.
  3. In a bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
Roasting
  1. Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and slightly caramelized.
  2. Remove from the oven and let cool slightly.
Serving
  1. Drizzle the roasted sweet potatoes with honey, then sprinkle with crumbled feta cheese and chopped walnuts.
  2. Garnish with fresh parsley if desired and serve warm or at room temperature.
