Preparation
- Preheat your oven to 400°F (200°C).
- Wash and slice the sweet potatoes into 1/2 inch rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
Cooking
- Arrange on a baking sheet and roast for 20-25 minutes until tender and golden.
- In a small bowl, mix crumbled feta with honey.
- Once sweet potatoes are done, remove from oven and top each round with a spoonful of honey feta.
- Return to the oven for an additional 5 minutes to warm the feta.
Serving
- Garnish with fresh herbs if desired and serve warm.
Notes
Make sure to cut the sweet potatoes evenly for consistent cooking. You can add other spices, such as paprika or cumin, for extra flavor. Feel free to use different types of cheese if feta is not available. To store, allow the rounds to cool completely. Place them in an airtight container and store in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving again. Chopped nuts can add crunch. Goat cheese can be used as a feta alternative.
