Sweet Potato Preparation
  • 2 medium sweet potatoes Peel and slice into 1 cm rounds
  • tablespoons olive oil For tossing the sweet potato rounds

Topping
  • 200 g feta cheese Crumble the cheese for mixing with honey
  • 2 tablespoons honey Adjust amount based on preferred sweetness
  • Fresh herbs (like thyme or rosemary) For garnishing

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. Peel and slice the sweet potatoes into rounds about 1 cm thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper on a baking sheet.
Roasting
  1. Roast in the oven for 25-30 minutes, turning halfway through, until golden and tender.
Mixing Topping
  1. While the sweet potatoes are roasting, crumble the feta cheese and mix it with honey in a bowl.
Final Assembly
  1. Once the sweet potatoes are done, remove them from the oven and top each round with the honey feta mixture.
  2. Return to the oven for an additional 5 minutes until the feta is slightly warmed.
  3. Serve warm, garnished with fresh herbs.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, place them in the oven for a few minutes until warmed through. Ensure uniform cutting of sweet potatoes for even cooking. Adjust honey based on personal sweetness preference and experiment with different herbs for garnishing.
