Preparation & Roasting
- Preheat oven to 400°F (200°C) and prepare a large roasting pan. Peel and chop carrots into 1-inch pieces.
- In a small bowl, whisk together melted butter, honey, and minced garlic until well combined.
- Place chopped carrots in a large bowl, pour the honey garlic butter mixture over them, and toss to coat evenly. Season with salt and black pepper.
- Spread the seasoned carrots in a single layer on the prepared roasting pan. Roast for 20-25 minutes, or until tender and lightly caramelized, stirring halfway through.
- Garnish with fresh chopped parsley before serving hot.
Notes
For best results, do not overcrowd the roasting pan; use two pans if necessary to ensure even caramelization. Flipping the carrots halfway through cooking can also help achieve uniform browning.
