Preparation
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- Brush the inside of the squash halves with olive oil, and drizzle honey over them.
- Season with salt and pepper.
Cooking
- Place the squash halves cut side down on a baking sheet and roast for about 25-30 minutes, or until tender.
- Remove from the oven and flip the squash over.
- Sprinkle goat cheese into each half and return to the oven for an additional 5 minutes to melt the cheese.
Serving
- Garnish with fresh thyme leaves before serving.
Notes
This dish is best served warm. It pairs well with roasted meats or can be enjoyed on its own as a vegetarian option. Can store leftovers in an airtight container for 3-4 days; reheat in the oven or microwave.
