Preparation
- Preheat the oven to 400°F (200°C). In a large mixing bowl, toss the peeled and chopped carrots with olive oil, honey, salt, and pepper until they are thoroughly coated.
Cooking
- Spread the seasoned carrots in a single layer onto a large baking sheet and roast for 20-25 minutes, or until they are tender and slightly caramelized, remembering to stir them halfway through.
- While the carrots roast, prepare the balsamic glaze by simmering balsamic vinegar in a small saucepan over medium heat for 5-7 minutes, until it reduces and thickens into a glaze.
Serving
- Once roasted, transfer the carrots to a serving dish and drizzle generously with the prepared balsamic glaze before serving warm.
