Hot Honey BBQ Chicken Quesadillas

  • 2 cups Cooked chicken, shredded
  • 2 tbsp Hot honey
  • 1/4 cup BBQ sauce
  • 8 whole Large flour tortillas
  • 2 cups Shredded Monterey Jack cheese
  • 1/4 cup Red onion, finely diced optional
  • 1/4 cup Bell pepper (any color), finely diced optional
  • 1 tbsp Olive oil or butter

  • Skillet or griddle
  • Spatula
  • Cutting board

Method
 

Preparation
  1. In a bowl, combine the shredded cooked chicken with hot honey and BBQ sauce, mixing well to coat.
  2. If using, gently sauté diced red onion and bell pepper in a small pan until softened, then set aside.
Assembly & Cooking
  1. Heat a large skillet or griddle over medium heat and lightly grease with olive oil or butter.
  2. Place one tortilla in the skillet. Sprinkle half with cheese, then add a layer of the hot honey BBQ chicken mixture, and a sprinkle of the sautéed vegetables if desired. Top with more cheese.
  3. Fold the other half of the tortilla over the filling and press gently with a spatula.
  4. Cook for 2-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is fully melted.
  5. Remove the cooked quesadilla from the skillet, slice into wedges, and repeat with remaining ingredients.

Notes

Serve with a side of sour cream, salsa, or extra hot honey for dipping. You can use leftover rotisserie chicken for an even faster prep time.
