Preparation
- In a bowl, combine the shredded cooked chicken with hot honey and BBQ sauce, mixing well to coat.
- If using, gently sauté diced red onion and bell pepper in a small pan until softened, then set aside.
Assembly & Cooking
- Heat a large skillet or griddle over medium heat and lightly grease with olive oil or butter.
- Place one tortilla in the skillet. Sprinkle half with cheese, then add a layer of the hot honey BBQ chicken mixture, and a sprinkle of the sautéed vegetables if desired. Top with more cheese.
- Fold the other half of the tortilla over the filling and press gently with a spatula.
- Cook for 2-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is fully melted.
- Remove the cooked quesadilla from the skillet, slice into wedges, and repeat with remaining ingredients.
Notes
Serve with a side of sour cream, salsa, or extra hot honey for dipping. You can use leftover rotisserie chicken for an even faster prep time.
